If you don’t geek out on food facts or have a desire to understand why and how this will help you to create a healthier you, then take my word and just start making this salad.
RECIPE
Shred a carrot or two, put about a 1/2 teaspoon of apple cider vinegar on it (not necessary but is beneficial), and about a tablespoon of organic olive oil or coconut oil. Season with sea salt, and black pepper., and mix it up! That’s it.
I will sometimes use a bit of nutmeg or cinnamon for a different taste. You could also jazz up this salad with some added raisins, or maybe some cashews..?? it’s up to your imagination.
HEALTH BENEFITS:
- carrots are naturally anti-fungal and anti-bacterial, which are good things for anyone whom has been eating a typical diet heavy in processed foods, refined carbohydrates, and excess sugars…. which often leads to overgrowth of “bad” fungi/bacteria in the intestinal tract.
- Overgrowth of “bad” bacteria will bring forth a host of problems that can manifest in numerous ways ranging from arthritic symptoms to immune system issues.
- the indigestible fiber within carrots helps to pull excess toxins out of the intestinal tract, easing the burden on the liver and preventing re-absorption of these toxins
- coconut oil is a high quality saturated fat, which in itself is a reason to eat it. Coconut oil is also anti-microbial and anti-fungal. And some people regard it as pro-thyroid due to the manner in which the body must metabolize it.
Bottom line, this salad is damned healthy, it tastes good, and it is really easy to make. There is no reason to not include this in your diet.
